Peanut Butter Balls

Peanut Butter Balls

2 Cups Peanut Butter- Smooth
2 Cups Powder Sugar
2 Cups Graham crackers - Honey original style
1/4 melted Butter
Chocolate chips- to be melted

Directions:  Mix all ingredients well and chill for several hours (they make balls better if they are cold)...Roll into balls & dip into melted chocolate...put onto wax paper and stick into freezer for 20 mins. Move them into a Ziploc bag and store in the freezer....

Sweet & Sour Chicken

This is my favorite low calorie meal EVER! The kids love it and it's super easy!

Sweet & Sour Chicken

1 pound trimmed boneless skinless chicken breast cut into bite sized cubes
1/2 onion cut into strips
1 green bell pepper cut into strips
1 red bell pepper cut into strips
1 bottle sweet & sour stir fry sauce ( I use La Choy or kikkoman whatever is on sale)
1 can of Pineapple chunks
2 Tablespoon freshly minced garlic
salt and pepper
  (optional ingredients...if you cook it like fajitas don't use these ingredients but if you want a crispier meat see the directions below using these ingredients)
1 Tabelspoon cornstarch
1 teaspoon garlic powder
ground pepper to taste
1/4 teaspoon salt
1 tablespoon toasted sesame seed oil

Directions:  In a large bowl, combine the cornstarch, garlic powder, salt & pepper and mix well. Add the chicken and toss until the chicken pieces are thoroughly coated.  
Place a large nonstick skillet or wok on high heat. When hot, add 1 teaspoon sesame oil, onion, pepper and garlic. Cook, stirring until the garlic softens and the vegetables are a crisp tender 2 to 4 minutes. Be careful not to overcook or garlic may burn. Transfer vegetables to a large bowl and cover to keep warm.
Return the pan to high heat and add another teaspoon of sesame oil and half the chicken in a single layer. Cook until the pieces are lightly browned on the bottom. Flip the pieces and continue cooking until chicken is no longer pink 4-6 minutes depending on the size of your pieces. Do again for all the chicken.
Return the vegetables into the pan with all the chicken and reheat if necessary. Add the sauce and mix well together. 
We served it with White rice yum yum!

Sloppy Joe's

This is a fast meal for those moments when you don't have much time to prepare. We usually have all these items on hand. This is Dante's go to meal on his cooking nights. We had it for Dinner tonight and I forgot to take a picture. :( sorry but it was delicious!

Here is what it may look like:


Sloppy Joe's

1 pound ground meat (we use ground turkey)
1/2 onion chopped
1 stalk celery, sliced (we use 3-4 stalks because my kids like a little more crunch)
1-1/2 cups of Ketchup
1/4 Cup Brown Sugar
1 Tablespoon white vinegar
1-1/2 Tablespoon Yellow mustard
salt and pepper

Directions:  Brown meat season and Drain (when we use turkey meat we don't drain). Add celery, onion & saute till all is tender then ADD ketchup, Brown Sugar, Vinegar & mustard. Simmer for 10 minutes, Then serve on hamburger buns, regular bread, or even over rice if preferred.

We served it with hamburger buns with mixed vegetables on the side. You can also serve with oven fries and a bowl of Raw Carrots. So many options!

Freezer Crockpot Ham and Potatoes

Okay I am on a mission to find tasty Crock pot recipe's that can be frozen and pulled out on one of those real lazy days. Pinterest is a beautiful thing in some cases. I found this website: Six Cents website It has some really good ideas but I am weary of taste. So far we have tried one... the salsa chicken and hated it but the recipe is still easy enough to make fresh. I think the frozen side just left WAY to much juice it wasn't great. Last week we tried the Ham and scalloped potatoes.
I am not a big Ham fan but it was pretty good. If you want to make something out of your rut this was surprisingly very good. My kids asked for more. Now this recipe was split in two and frozen in two different bags to make 2 meals but you guys can split it to fit your family or single size :)

Scalloped Potatoes and Ham

12 new potatoes and cut into ¼ inch round slices or a large bag of frozen potatoes
2 cans of cream of your choice—I used potato
2 cans of water
2 ham steaks, cubed--we used turkey ham
8 oz cheddar cheese
4 cups of broccoli
salt and pepper

Directions:  Divide everything evenly into two containers.  Cook on low for 8 hours.
*NOTE* I added the potatoes fresh the morning it went into the crock pot to keep them from turning brown. Potatoes are something we usually have on hand. 
We served it over White Rice but the potatoes are enough starch if you want to serve it with a veggie side or salad.
